Plug-inPair watchOS 11.5 with a jailbroken iOS 16.6 phone
WatchPair11 changes the pairing checks on an already-jailbroken iPhone so it can pair with a watch running watchOS 11.5.
The maintainer reports pairing and notifications on an iPhone 14 Pro Max with iOS 16.6 and nathanlr. Other combinations aren't established, and iOS 17 isn't supported. watchOS updates through the paired phone don't work. The source has no declared license.
